  • 1/2 cup semi-sweet chocolate chips (for ganache)
  • 1/4 cup powdered sugar (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Sift together flour and baking powder. Gradually add to the butter mixture while alternating with milk until just combined.
  4. Fill the lined muffin tins about two-thirds full with batter and bake for 18-20 minutes or until golden brown.
  5. For the filling, whisk heavy cream with powdered sugar until soft peaks form, then fold into cooled pastry cream.
  6. To make the ganache, melt chocolate chips over low heat and stir in heavy cream until smooth.
  7. Once cupcakes have cooled completely, fill them with the pastry cream and top with chocolate ganache.
