Description

This Air Fryer Salmon Rice Bowl is a deliciously satisfying meal that combines perfectly cooked salmon fillets with fluffy rice and vibrant vegetables.   • 2 skinless salmon fillets (6 oz each)
  • 1 cup cooked rice (white, brown, or jasmine)
  • 1 cup mixed vegetables (bell peppers, broccoli, or snap peas)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp olive oil
  • 1 tbsp toasted sesame seeds (for topping)
  • 2 green onions, chopped (for topping)

Instructions

  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. Season salmon fillets with salt and pepper; set aside.
  3. In a small bowl, whisk together soy sauce and honey.
  4. Place salmon in the air fryer basket and drizzle half the sauce over them. Cook for 8-10 minutes until flaky.
  5. In a skillet over medium heat, sauté mixed vegetables in olive oil for about 5 minutes until tender-crisp.
  6. Fluff the cooked rice in bowls, top with sautéed vegetables and salmon pieces. Drizzle with remaining sauce and sprinkle with sesame seeds and green onions.
