Ingredients

  • 1 cup sweetened condensed milk
  • 2 cups unsweetened shredded coconut
  • 1 cup finely chopped almonds (plus extra for topping)
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. In a mixing bowl, combine sweetened condensed milk and shredded coconut until well mixed. Stir in chopped almonds, reserving some whole ones for topping.
  2. Cover and refrigerate the mixture for about one hour until firm.
  3. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet.
  4. Melt dark chocolate chips with coconut oil in a microwave-safe bowl until smooth.
  5. Dip each truffle into the melted chocolate using a fork, then return to parchment paper and sprinkle with reserved almond pieces.
  6. Chill again for about 30 minutes until chocolate hardens.
