  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 cup Andes mints (chopped)
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, mix softened butter, granulated sugar, brown sugar, and vanilla extract until creamy.
  3. Add the eggs one at a time, mixing until fluffy.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually combine with the wet ingredients until just mixed.
  5. Fold in the chopped Andes mints.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
