  • 1 cup celery (chopped)
  • 4 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot over medium heat, heat the vegetable oil. Sauté chopped onions, bell peppers, celery, and minced garlic until softened (about 5 minutes).
  2. Add sliced andouille sausage and cook until browned. Incorporate diced chicken breasts and cook until no longer pink.
  3. Stir in diced tomatoes, okra, chicken broth, and Cajun seasoning. Bring to a boil then reduce to low heat.
  4. Simmer gently for at least one hour, stirring occasionally.
  5. Five minutes before serving, add shrimp; cook until they turn pink.
  6. Serve hot over cooked rice and garnish with parsley or green onions if desired.
