Description

Baileys Truffles are an indulgent chocolate treat that marries rich dark chocolate with the creamy essence of Baileys Irish Cream.   • 8 oz dark chocolate (70% cocoa or higher)
  • 1 cup heavy cream
  • 1/2 cup Baileys Irish Cream
  • 1/4 cup unsweetened cocoa powder (for dusting)
  • 1/4 cup chocolate sprinkles or chopped nuts (optional)

Instructions

  1. Chop dark chocolate into small pieces and place in a heatproof bowl over simmering water. Stir until melted and smooth.
  2. In a saucepan, heat heavy cream until it simmers (do not boil). Pour over melted chocolate and let sit for 2 minutes before stirring until combined.
  3. Mix in Baileys Irish Cream until smooth. Refrigerate for at least 2 hours or until firm.
  4. Scoop portions using a melon baller or teaspoon, roll into balls, and coat with cocoa powder or optional toppings.
  5. Place on a parchment-lined baking sheet and refrigerate until ready to serve.
