Ingredients

  • 12 oz penne or fusilli pasta
  • 8 oz block of feta cheese
  • 2 cups cherry tomatoes
  • 4 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes and minced garlic. Drizzle with 2 tablespoons of olive oil and season with salt and pepper.
  3. Place the block of feta in the center, drizzling additional olive oil on top.
  4. Bake for 30 minutes until the feta is golden and the tomatoes are bursting.
  5. While baking, cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Once out of the oven, mash the feta and tomatoes together until smooth. Toss in the cooked pasta, adding reserved water as needed for creaminess.
  7. Garnish with fresh basil before serving.
