Soft, fluffy, and bursting with rich banana flavor, these muffins are perfect for breakfast or a delightful snack any day of the week. Easy to make and versatile enough to customize with your favorite add-ins like walnuts or chocolate chips, they promise to elevate your culinary experience.

Ingredients

Scale
  • 3 ripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. Combine melted butter, eggs, and vanilla extract with the mashed bananas; mix well.
  5. Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Fill each muffin liner about two-thirds full and bake for 18-20 minutes until golden brown and a toothpick comes out clean.
