  • 3 lb chuck roast
  • 4 fresh banana peppers, sliced
  • 2 large yellow onions, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Slice onions and mince garlic.
  3. In a skillet over medium-high heat, sear the chuck roast on both sides until browned (about 4 minutes per side).
  4. Place the roast in a roasting pan, surrounding it with onions, garlic, and banana peppers. Pour in beef broth until it covers half of the meat.
