  • 34 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes (about 1 lb), cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup fresh parsley or cilantro, chopped
  • 1 tbsp Sriracha (optional)
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread in a single layer on the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes, stirring halfway through for even cooking.
  4. While sweet potatoes roast, heat a grill pan over medium-high heat. Season chicken breasts with salt and pepper; grill for 6-7 minutes on each side until cooked through (internal temperature of 165°F / 74°C).
  5. Brush BBQ sauce on chicken while grilling; let caramelize slightly before removing from heat.
  6. In each bowl, layer roasted sweet potatoes and sliced BBQ chicken. Drizzle with extra BBQ sauce if desired and top with fresh herbs.
