- 3–4 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 2 medium sweet potatoes (about 1 lb), cubed
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- ¼ cup fresh parsley or cilantro, chopped
- 1 tbsp Sriracha (optional)
- 1 tbsp lemon juice
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast sweet potatoes for 25-30 minutes, stirring halfway through for even cooking.
- While sweet potatoes roast, heat a grill pan over medium-high heat. Season chicken breasts with salt and pepper; grill for 6-7 minutes on each side until cooked through (internal temperature of 165°F / 74°C).
- Brush BBQ sauce on chicken while grilling; let caramelize slightly before removing from heat.
- In each bowl, layer roasted sweet potatoes and sliced BBQ chicken. Drizzle with extra BBQ sauce if desired and top with fresh herbs.
