- 8 corn or flour tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 2 cups enchilada sauce (store-bought or homemade)
- 1 medium onion, diced
- 2 tsp cumin
- 2 tsp chili powder
- Salt to taste
- 1 cup sour cream
- ¼ cup fresh cilantro, chopped
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a skillet over medium heat, sauté diced onions with salt until translucent (about 5 minutes). Add ground beef, breaking it apart until browned.
- Season the beef mixture with cumin and chili powder; let simmer for 2 minutes.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll tightly and place seam-side down in the baking dish.
- Pour enchilada sauce generously over the rolled tortillas and top with remaining cheese.
