  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cauliflower florets (fresh or frozen)
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp unsalted butter
  • 4 oz cream cheese (full-fat)
  • Salt and pepper to taste

Instructions

  1. Chop the onion and garlic, and cut the beef into bite-sized pieces.
  2. In a large skillet over medium-high heat, add oil and sear the beef until browned (5-7 minutes). Remove from skillet.
  3. Sauté onions and garlic in the same skillet until translucent (3-4 minutes). Stir in Worcestershire sauce and beef broth, scraping up any brown bits.
  4. Return beef to skillet, season with salt and pepper, reduce heat to low, and simmer uncovered for 15-20 minutes until gravy thickens.
  5. Steam or boil cauliflower florets until tender (10-15 minutes). Drain and blend with butter and cream cheese until smooth.
  6. Serve by spooning cauliflower mash onto plates and ladling beef tips with gravy on top.
