  • 1 lb ground bison
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (any color)
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle oil and sauté onion and garlic until fragrant and golden brown, about 5 minutes.
  2. Increase heat to medium-high; add ground bison. Cook until browned, breaking it apart with a spatula (approximately 7 minutes). Season with salt and pepper.
  3. Stir in chopped bell peppers; cook for another 3 minutes.
  4. Add canned tomatoes (with juices), kidney beans, chili powder, and cumin. Stir well to combine.
  5. Bring to a boil; reduce heat to low. Cover and let simmer for at least 30 minutes for flavors to meld.
  6. Serve hot topped with sour cream and cheddar cheese.
