Description

  • 2 large flour tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheese (Monterey Jack and cheddar blend)
  • ½ cup sour cream or Greek yogurt
  • 1 cup fresh spinach (optional)
  • ½ tsp cumin
  • ½ tsp chili powder
  • Olive oil for cooking

Instructions

  1. Prep ingredients by rinsing and draining black beans and chopping fresh spinach if using.
  2. Heat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet; sprinkle half of the cheese on one side. Add black beans, spinach, cumin, chili powder, and top with remaining cheese before folding the tortilla.
  4. Cook until golden brown on one side (about 3 minutes), then flip and cook for an additional 2 minutes until crispy and melty.
  5. Remove from heat, slice into wedges, and serve with sour cream or salsa.
