  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1 cup cherries (fresh or jarred)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and dust with flour.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and sugar.
  3. In another bowl, beat the eggs, buttermilk, oil, and vanilla until smooth. Gradually add to the dry mixture, stirring until just combined.
  4. Divide the batter between the prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean.
  5. Allow the cakes to cool in their pans for ten minutes before transferring them to wire racks to cool completely.
  6. Once cooled, slice each layer in half horizontally if desired. Spread whipped cream and cherries between layers, then cover the entire cake with remaining whipped cream.
