  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream (full-fat)
  • 1 cup fresh blackberries (divided)
  • 1 tsp lavender extract (food-grade)
  • 2 large eggs (room temperature)
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with liners.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of each muffin liner.
  3. In another bowl, beat softened cream cheese until smooth. Add sour cream, sugar, lavender extract, lemon juice, and eggs one at a time, mixing well after each addition.
  4. Fold in half the blackberries into the cheesecake mixture and pour over the crusts in the muffin tin.
  5. Bake for 20-25 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least four hours.
  6. Top with remaining blackberries before serving.
