- Punch down the dough and shape it into small balls (2 inches wide). Let rest for another 30 minutes on parchment-lined trays.
- Heat oil in a deep pot to around 350°F (175°C) and fry bomboloni until golden brown on both sides.
- Whip heavy cream until soft peaks form, then fold in vanilla extract and powdered sugar to create the filling.
- Once cooled slightly, fill each bombolone with cream using a piping bag.
