Description

A classic roasted boneless leg of lamb, tender and juicy, infused with garlic, herbs, and olive oil. This elegant yet simple dish is perfect for family gatherings or special occasions, delivering rich flavor with minimal preparation.


Ingredients

  • 1 boneless leg of lamb (about 1.82 kg / 44.5 lb)

  • 4 cloves garlic, minced

  • 3 tbsp olive oil

  • 2 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 lemon, sliced

  • 1/2 cup chicken or beef broth


Instructions

  • Preheat oven to 190°C (375°F).

  • In a small bowl, mix garlic, olive oil, rosemary, thyme, salt, pepper, and paprika.

  • Rub the mixture all over the lamb.

  • Place lamb in a roasting pan and add broth to the bottom of the pan.

  • Roast for 75–90 minutes, until internal temperature reaches desired doneness.

  • Remove from oven, cover loosely with foil, and rest for 15 minutes.

  • Slice and serve with pan juices and lemon slices.

Notes

  • Use a meat thermometer for best results.

  • Letting the lamb rest ensures juicier slices.

  • Serve with roasted potatoes or vegetables.
