Ingredients

  • 3 lbs Chuck Roast
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Low-Sodium Beef Broth
  • 1 cup Red Wine
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Season the chuck roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast until browned on all sides (4-5 minutes each side).
  3. Remove the roast and sauté onions and garlic in the same pot for 3-4 minutes until softened.
  4. Deglaze with red wine, scraping up browned bits; simmer for 5 minutes.
  5. Return the roast to the pot, add beef broth, thyme, and bay leaves until liquid covers half the meat.
  6. Cover tightly and braise in the oven for about 3 hours, until fork-tender.
