  • 2 lbs chicken thighs (bone-in)
  • 1 large onion (sliced)
  • 4 garlic cloves (minced)
  • 1 cup bell peppers (diced, mixed colors)
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 1 Scotch bonnet pepper (whole, adjust for spice preference)
  • 2 medium tomatoes (chopped, or 1 can diced tomatoes)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp browning sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Water for simmering

Instructions

  1. Rinse the chicken thighs and pat dry. Season generously with salt and pepper; let rest for 15 minutes.
  2. Heat vegetable oil in a large pot over medium heat. Sauté onions and garlic until translucent.
  3. Add diced bell peppers, thyme, and tomatoes; cook until peppers soften.
  4. Increase heat to medium-high and add seasoned chicken thighs. Brown on all sides for about 5-7 minutes.
  5. Pour in soy sauce, browning sauce, and add whole Scotch bonnet pepper along with enough water to cover the chicken halfway. Bring to a boil then reduce heat.
  6. Cover tightly and simmer on low for 30-40 minutes until chicken is tender and sauce thickens.
  7. Serve hot over rice or your favorite side dishes.
