  • 1 crusty baguette
  • 8 oz fresh burrata cheese
  • 2 ripe heirloom tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into 1-inch pieces and arrange on a baking sheet. Drizzle with olive oil and toast for 5-7 minutes until golden brown.
  2. In a bowl, combine diced tomatoes, salt, pepper, chopped basil, and a splash of olive oil. Toss gently.
  3. Assemble bruschetta by spooning the tomato mixture onto toasted baguette slices.
  4. Cut open burrata just before serving and place on top of each slice, allowing it to ooze over the tomatoes.
