  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 8 oz Andouille sausage (sliced; substitute with turkey sausage if desired)
  • 2 teaspoons Cajun seasoning
  • 2 bay leaves
  • 4 cups low-sodium chicken broth
  • 1 cup cooked rice (white or brown)

Instructions

  1. Soak the dried red beans in water overnight.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, bell pepper, and celery until softened.
  3. Add minced garlic and sliced Andouille sausage; cook until sausage is browned.
  4. Mix in the soaked red beans, Cajun seasoning, and bay leaves.
  5. Pour in chicken broth and bring to a boil, then reduce heat to low. Cover and simmer for about one hour or until beans are tender.
  6. While beans simmer, prepare rice according to package instructions.
