  • 8 corn tortillas
  • 2 cups shredded cheese (1 cup Monterey Jack, 1 cup Cheddar)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup sour cream
  • 1 can (15 oz) fire-roasted tomatoes
  • 1 onion (finely chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, sauté chopped onions over medium heat until translucent. Add fire-roasted tomatoes and enchilada sauce; simmer for 10 minutes.
  3. Warm corn tortillas in a dry skillet until pliable. Spread some sauce on each tortilla, fill with cheese, roll tightly, and place seam-side down in a baking dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and top with leftover cheese.
  5. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until bubbly and golden.
  6. Serve hot topped with fresh cilantro and sour cream.
