  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup fresh bell peppers (red, yellow, and green), sliced
  • 1 medium onion, sliced
  • 2 tablespoons taco seasoning
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Juice of 1 lime

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. In a skillet, heat olive oil over medium heat. Sauté sliced onion and bell peppers until tender (about 5 minutes).
  3. Season chicken breasts with taco seasoning on both sides.
  4. Layer half the sautéed veggies in the baking dish. Add seasoned chicken, diced tomatoes (juice included), remaining veggies, and top with shredded cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden brown.
  6. Let cool briefly before serving with a dollop of sour cream.
