  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • Juice of 2 limes (about 4 tbsp)
  • ½ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: chop veggies and mince garlic.
  2. Cook rice according to package instructions.
  3. Heat olive oil in a skillet over medium-high heat. Add minced garlic until fragrant.
  4. Season chicken breasts with salt and pepper; sauté for about 6 minutes per side until cooked through (internal temperature should reach 165°F). Remove from heat and let rest before slicing.
  5. In a small bowl, mix lime juice with chopped cilantro for the sauce.
  6. Assemble bowls by layering brown rice, black beans, sliced chicken, cherry tomatoes, and avocado.
  7. Drizzle lime-cilantro sauce over the top before serving.
