  • 3 cups cooked shredded boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 cup green enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 8 flour or corn tortillas
  • ½ cup sour cream (for garnish)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken in boiling salted water until the internal temperature reaches 165°F (74°C), approximately 15-20 minutes. Shred the chicken using two forks.
  3. In a bowl, combine shredded chicken, minced garlic, and half of the green enchilada sauce. Mix well.
  4. Fill each tortilla with about two tablespoons of the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the remaining green enchilada sauce over the rolled enchiladas and sprinkle with cheddar cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  7. Serve with a drizzle of sour cream and garnish with chopped cilantro.
