  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup sliced red bell pepper
  • 1 cup sliced green bell pepper
  • 1 medium yellow onion, sliced
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the chicken into bite-sized pieces and slice the bell peppers and onion.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken seasoned with salt and pepper; sauté until golden brown (5-7 minutes).
  3. Add sliced bell peppers and onions; sauté until tender (3-4 minutes).
  4. Pour in heavy cream and chicken broth, then add chili powder and cumin. Stir to combine; simmer for about 5 minutes until slightly thickened.
  5. Cook pasta according to package instructions; drain well. Combine pasta with the skillet mixture.
  6. Toss gently to coat everything in the sauce; serve hot.
