  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1/3 cup freshly squeezed lemon juice
  • 1/4 cup capers
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts between plastic wrap and pound to about 1/2 inch thick for even cooking.
  2. Dredge each chicken breast in seasoned flour (salt and pepper).
  3. Heat olive oil in a skillet over medium heat. Sauté the chicken for about 4-5 minutes on each side until golden brown; remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant. Add lemon juice, scraping up browned bits, then stir in capers and chicken broth; simmer for 3 minutes.
  5. Return chicken to the skillet and simmer for an additional 2 minutes to meld flavors.
  6. Serve with sauce drizzled over the top alongside pasta or vegetables.
