  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups crisp lettuce, chopped
  • 1 cup shredded carrots
  • 1 cup bell peppers, chopped
  • 1/2 cup crispy chow mein noodles
  • 2 green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat grill or pan over medium heat. Season chicken with salt and pepper; cook for about 6-7 minutes per side until golden brown and cooked through. Let cool.
  2. While chicken cooks, chop lettuce, bell peppers, and carrots. Slice green onions thinly.
  3. In a bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey if desired.
  4. Once chicken has cooled, chop it into bite-sized pieces. In a large bowl, combine chicken with chopped vegetables and drizzle dressing over the top.
  5. Toss in crispy chow mein noodles just before serving to maintain their crunch.
