  • 3 cloves fresh garlic, minced
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • Juice of 2 limes
  • 1 tbsp brown sugar
  • 2 cups basmati rice
  • 2 cups diced tomatoes
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup chopped cilantro

Instructions

  1. 1. Marinate the chicken: In a bowl, mix garlic, chipotle peppers, lime juice, and brown sugar. Add chicken and let it marinate for at least 30 minutes.
