  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add egg and vanilla; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. In a separate bowl, beat cream cheese with powdered sugar until smooth.
  6. Scoop about two tablespoons of cookie dough into your palm, flatten it slightly, place one tablespoon of cheesecake filling in the center, encase with more dough, and roll into a ball.
  7. Place on baking sheets and bake for 12-15 minutes or until slightly firm but soft in the center.
