  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • 1 cup whole milk (or almond milk)
  • ½ cup vegetable oil (or melted butter)
  • 2 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • Whipped cream or frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, milk, oil, and peppermint extract until smooth. Combine wet ingredients with dry ingredients and stir gently until just mixed.
  4. Fold in chocolate chips and divide the batter evenly between the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick comes out clean. Allow cakes to cool in pans for ten minutes before transferring to wire racks to cool completely.
