  • 1 cup cooked quinoa
  • 1 cup dark chocolate chips (60% cocoa)
  • 1/2 cup nut butter (peanut or almond)
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup puffed rice cereal

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a microwave-safe bowl, melt dark chocolate chips in increments of 30 seconds until smooth.
  3. In a large mixing bowl, combine cooked quinoa and puffed rice cereal. In another bowl, mix nut butter, honey (or maple syrup), and vanilla extract until smooth. Pour this mixture over the quinoa and stir until combined.
  4. Add melted chocolate to the mixture and stir until evenly coated.
  5. Transfer the mixture to the prepared baking dish and press down firmly to pack tightly.
  6. Bake for 20-25 minutes until set but soft in the center. Allow cooling completely before cutting into squares.
