  • 1 cup granulated sugar
  • 1 cup mixed dried fruits (raisins, currants, chopped dates)
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ¾ cup unsalted butter (room temperature)
  • 4 large eggs
  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup marzipan
  • 1 cup royal icing

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and line a round cake pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, spices, and salt. Set aside.
  3. In another bowl, cream butter and sugar until fluffy (about 3 minutes). Add eggs one at a time, mixing well.
  4. Gradually fold in the flour mixture and dried fruits until just combined. Do not overmix.
  5. Pour batter into the prepared pan and bake for 60–70 minutes or until a toothpick comes out clean. Cool before icing with marzipan and royal icing.
