  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp fresh ginger, minced

  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • ½ tsp ground nutmeg
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the pumpkin and mincing the garlic and ginger.
  2. In a large pot over medium heat, sauté the diced onion in olive oil until translucent (about 4-5 minutes).
  3. Add the pumpkin cubes along with cumin and nutmeg; cook for another 5 minutes.
  4. Pour in the coconut milk and vegetable broth; bring to a boil before reducing to a simmer for 20 minutes until pumpkin is tender.
  5. Blend the mixture until smooth using an immersion blender.
