- 2 cups low-sodium chicken broth

Instructions
- In a large skillet over medium heat, mix vegetable oil and flour to create a roux. Stir continuously until it turns a rich brown color (10-15 minutes).
- Add onion, bell pepper, celery, and garlic to the roux. Cook until softened (about 5 minutes).
- Gradually pour in chicken broth while stirring to avoid lumps. Add Cajun seasoning and let simmer for 10 minutes.
- Gently stir in crawfish tails and simmer uncovered for another 5 minutes.
- Taste and adjust seasonings as needed before serving over cooked rice and garnishing with green onions.
