Description

  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 medium onion, finely chopped
  • 1 green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning (paprika, cayenne pepper, thyme, oregano)
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, mix vegetable oil and flour to create a roux. Stir continuously until it turns a rich brown color (10-15 minutes).
  2. Add onion, bell pepper, celery, and garlic to the roux. Cook until softened (about 5 minutes).
  3. Gradually pour in chicken broth while stirring to avoid lumps. Add Cajun seasoning and let simmer for 10 minutes.
  4. Gently stir in crawfish tails and simmer uncovered for another 5 minutes.
  5. Taste and adjust seasonings as needed before serving over cooked rice and garnishing with green onions.
