  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, chopped
  • 8 oz cream cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Sauté garlic in olive oil over medium heat for 1 minute; add mushrooms and cook until soft, about 5 minutes. Stir in spinach until wilted, then remove from heat and mix in cream cheese.
  3. Flatten chicken breasts between plastic wrap to about 1/2 inch thick. Spread the filling evenly over each breast, sprinkle with Parmesan, roll tightly, and secure with toothpicks.
  4. Place roulades seam-side down in the baking dish and bake for 30-35 minutes until golden brown.
  5. In a saucepan, combine chicken broth and heavy cream; simmer gently while the roulades bake. Season with salt and pepper.
