  • 12 ounces paccheri pasta
  • 1 cup fresh ricotta cheese
  • 1/2 cup fresh basil, chopped
  • 2 cups tomato sauce
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly coat a baking dish with olive oil.
  2. Boil salted water in a large pot; add paccheri and cook until al dente. Drain and set aside.
  3. In a bowl, mix ricotta, chopped basil, salt, pepper, and half of the Parmesan until blended.
  4. Stuff each paccheri with the ricotta mixture using a spoon or piping bag.
  5. Spread some tomato sauce on the bottom of the baking dish; arrange stuffed paccheri in a single layer on top. Pour remaining sauce over them.
  6. Sprinkle with remaining Parmesan cheese; cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
