  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cups baby spinach
  • 2 cups fettuccine or penne pasta
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. In a large skillet over medium heat, add olive oil and cook the chicken until golden brown (5-7 minutes). Season with salt and pepper. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Add spinach and cook until wilted (2 minutes).
  4. Pour in heavy cream and chicken broth; bring to a simmer. Stir in grated Parmesan until melted.
  5. Cook pasta according to package instructions; drain and combine with the creamy sauce and chicken in the skillet. Toss to coat evenly.
  6. Serve immediately, garnished with additional Parmesan if desired.
