  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 flour tortillas (10-inch)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Cooking spray or melted butter for brushing
  • ½ cup sour cream
  • ½ cup pico de gallo

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pot, bring water to boil and add chicken breasts. Simmer for 15-20 minutes until cooked through. Shred the chicken using two forks.
  3. In a bowl, mix shredded chicken with garlic, cumin, chili powder, salt, and pepper until evenly coated.
  4. Lay tortillas flat, fill each with the chicken mixture and a sprinkle of cheese. Roll tightly.
  5. Place taquitos seam-side down on a parchment-lined baking sheet. Lightly spray with cooking oil or brush with melted butter.
