- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 bell peppers (1 red, 1 green), diced
- 1 can (14.5 oz) diced tomatoes with juices
- 2 tsp chili powder
- 1 tsp ground cumin
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Rinse and pat dry the chicken breasts. Dice the bell peppers and onion.
- Layer the chicken in the bottom of the crockpot. Season with salt, pepper, chili powder, cumin, and minced garlic.
- Add the diced bell peppers and onions on top of the chicken.
- Pour the canned diced tomatoes (with juices) over everything and drizzle with lime juice.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken shreds easily.
- Shred the chicken in the pot using two forks, mix well, and serve warm.
