Ingredients

  • 1.5 lbs beef flank steak, sliced thin
  • 2 bell peppers (1 red, 1 green), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup low-sodium beef broth
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Slice flank steak against the grain into thin strips; season with salt and pepper.
  2. Slice the bell peppers and onion into strips.
  3. Layer the beef at the bottom of your crockpot, followed by the onion and bell peppers.
  4. In a bowl, mix soy sauce, beef broth, garlic, and cornstarch mixture until smooth; pour over ingredients in the crockpot.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Stir before serving over rice or noodles.
