  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 large eggs
  • 1 cup seasoned breadcrumbs
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In one bowl, whisk eggs until frothy; in another, place breadcrumbs. Dip each chicken breast in egg, then coat thoroughly with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat; cook chicken for about 3-4 minutes per side until golden brown.
  5. Place seared chicken in the baking dish. Spoon marinara sauce over each piece and top with mozzarella and Parmesan cheese.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  7. Serve garnished with fresh basil and extra marinara if desired.
