  • 4 medium russet potatoes (about 1.5 lbs)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary or thyme, chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Wash and peel the russet potatoes, then thinly slice them into rounds (about 1/8 inch thick).
  3. In a large bowl, toss the potato slices with olive oil, salt, pepper, and fresh herbs until evenly coated.
