Description

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning
  • 12 mini corn or flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • ½ cup sliced jalapeños (optional)
  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press mini tortillas into a muffin tin to create cups.
  3. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat, then stir in taco seasoning and simmer for 5 minutes.
  4. Spoon the seasoned beef into each tortilla cup, top with shredded cheese, and bake for 10-12 minutes until the cheese is melted.
  5. Remove from the oven and garnish with lettuce, tomatoes, jalapeños, and sour cream before serving.
