  • 2 cups heavy cream
  • 5 large egg yolks
  • 3/4 cup granulated sugar, divided
  • 1 tsp pure vanilla extract
  • 1 tsp ground nutmeg

Instructions

  1. Preheat oven to 325°F (160°C). In a saucepan, heat heavy cream and vanilla extract until steaming.
  2. In a bowl, whisk egg yolks with 1/2 cup sugar, nutmeg, cinnamon, and salt until pale.
  3. Gradually pour hot cream into the egg mixture while whisking to prevent curdling. Strain through a sieve.
  4. Pour custard into ramekins placed in a baking dish; fill with hot water halfway up the sides of ramekins.
  5. Bake for 30-35 minutes until just set but still jiggly. Cool and refrigerate for at least 2 hours.
  6. Before serving, sprinkle remaining sugar on top and caramelize using a torch or broiler until golden brown.
