  • 1 cup corn kernels (fresh or frozen)
  • 8 oz cream cheese (softened)
  • 1/2 cup Mexican crema (or sour cream)
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice each jalapeño in half lengthwise, removing seeds and membranes.
  2. In a bowl, mix corn kernels, cream cheese, Mexican crema, lime juice, chili powder, shredded cheese, and chopped cilantro until combined.
  3. Generously fill each jalapeño half with the elote mixture. Sprinkle panko breadcrumbs on top if desired.
  4. Place stuffed jalapeños on a parchment-lined baking sheet and bake for about 20 minutes until golden and bubbly.
  5. Drizzle with extra lime juice and garnish with cilantro before serving hot.
