- 1/2 cup Mexican crema (or sour cream)

- 1 cup shredded Monterey Jack cheese
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup panko breadcrumbs (optional)
Instructions
- Preheat your oven to 400°F (200°C). Slice each jalapeño in half lengthwise, removing seeds and membranes.
- In a bowl, mix corn kernels, cream cheese, Mexican crema, lime juice, chili powder, shredded cheese, and chopped cilantro until combined.
- Generously fill each jalapeño half with the elote mixture. Sprinkle panko breadcrumbs on top if desired.
- Place stuffed jalapeños on a parchment-lined baking sheet and bake for about 20 minutes until golden and bubbly.
