  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 68 green tomatillos, husked (about 1 lb)
  • 1/2 cup fresh cilantro, chopped
  • 1 medium onion, diced
  • Juice of 2 limes
  • 1 cup Queso Fresco or Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper and place them in the dish.
  2. Bake chicken for 25-30 minutes until cooked through. Shred the chicken once cooled.
  3. For the sauce, simmer tomatillos, garlic, and onion in water until soft (about 10 minutes). Drain and blend until smooth.
  4. Mix shredded chicken with some green sauce and chopped cilantro.
  5. Fill tortillas with the mixture, roll tightly, and place seam-side down in the baking dish.
  6. Top with remaining sauce and cheese. Bake for another 20 minutes until bubbly.
