- 2 tbsp espresso powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/2 cup all-purpose flour (sifted)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a saucepan over low heat, melt the butter until bubbling, then stir in granulated sugar and brown sugar until well combined.
- Remove from heat and allow to cool slightly before whisking in eggs one at a time. Add vanilla and mix until smooth.
- In a separate bowl, sift together flour, cocoa powder, espresso powder, and salt.
- Gradually fold dry ingredients into the wet mixture until just combined; lumps are okay! If using, fold in chocolate chips.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
