  • 2 tbsp espresso powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour (sifted)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a saucepan over low heat, melt the butter until bubbling, then stir in granulated sugar and brown sugar until well combined.
  3. Remove from heat and allow to cool slightly before whisking in eggs one at a time. Add vanilla and mix until smooth.
  4. In a separate bowl, sift together flour, cocoa powder, espresso powder, and salt.
  5. Gradually fold dry ingredients into the wet mixture until just combined; lumps are okay! If using, fold in chocolate chips.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
