  • 2 medium sweet onions, sliced
  • 3 cloves fresh garlic, minced
  • 2 tbsp butter
  • 1/4 cup low-sodium soy sauce
  • 1 cup low-sodium beef broth
  • Salt and pepper to taste
  • 1 cup shredded cheese (Gruyère or Swiss)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt butter and sauté sliced onions until golden brown and caramelized (about 15 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in soy sauce and beef broth, scraping up any bits from the pan.
  4. Arrange seasoned chicken breasts in the prepared baking dish and pour the onion mixture over them.
  5. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is bubbly.
  6. Serve hot, drizzling remaining sauce over the chicken.
